Dr. Meng Li is the Director of Product Development and brings over a decade of technical leadership and innovation to the alternative protein industry. Her journey began in 2012 with early work on Beyond Meat's plant-based chicken. Prior to joinning CellX, Meng spent six years at Eat Just, Inc., a San Francisco-based company. As Director of Food Science, she led multidisciplinary teams to pioneer and launch innovative products, notably the plant-based JUST Egg, and the world's first commercially available cultivated meat, GOOD Meat. Before her involvement in the industry, Meng did her post-doc at the FDA’s CFSAN center as a research scientist. Her tenure at the FDA deepened her biochemistry knowledge, ensuring regulatory compliance and innovation went hand-in-hand. Meng holds a Ph.D. in Food Science from the University of Maryland and a B.Eng. from Nanjing Agricultural University.
