Cole Pearsall is the co-founder of Acid League and Proxies. Over the past 10 years, he has been navigating his way through the endlessly stimulating world of food. From first experiences as a baker, progressing to service, social dining, product development, food design and now entrepreneurship. He has a formal background in food science and food engineering from the University of Guelph in Canada.
Acid League is a food brand that has leveraged technology, design, and food culture to create a platform for an audience to have access to products that have never been on the mass market. Started by developing a novel method of vinegar fermentation, their products have now spanned to over 5 different categories including non-alcoholic beverages (Proxies) which has spun off to become its own company. As the Chief Sales Officer, Cole spends his time on the front end of the business, focusing on new distribution opportunities, channel expansion and relationships with retail buyers.
If vinegar was not just a cooking condiment, could it be sweet, spicy, coffee-flavored, prebiotic, postbiotic, adaptogen, and Vitamin C? By adding functional ingredients and expanding the flavor boundary, overseas vinegar makers have changed the fate of vinegar, earning tens of millions of dollars in revenue.
