Junichi Mitsubori was born in 1974 in Kanagawa, Japan. As the eldest son, he was trained as a store heir from the age of ten. Mr. Mitsubori graduated from Wagashi course, Ecole de Patisserie de Tokio in 1995. In 2000, he became a Wagashi lecturer in the United States to show Japanese dessert culture. He was invited to participate in TV programs, and won Western vs Japanese confectioner championship, TV Champion R (TV Tokyo) in 2010 and hence gained great reputation in the industry.

Mr. Mitsubori launched photoblog “Ichinichi Ichika” (Wagashi of the Day) since 2015, and defined a new way of Wagashi in 2016, combining viewing and tasting to perform and produce Wagashi. In recent years, Mr. Mitsubori has been invited to attend overseas famous confectionery fairs, and given lectures and promoted Wagashi culture in Paris, New York, Vancouver, Sydney, Shanghai, Hong Kong and Seoul.
