Dr. Shaohui Zhang, Professor of School of Agriculture and Biology and Associate Director of Bor Luh Food Safety Research Center in Shanghai Jiao Tong University. He graduated from Kagoshima University in Japan and granted a doctor degree of agriculture science in 1998. After that, Dr. Zhang has worked in Tanishow Food Research Institute as Researcher, Shanghai Bright Dairy as Manager of R&D and Director of Production & Technology, Mengniu Group as Chief Research Officer, Doehler Group as Technical Header of APAC. His main responsibilities were new product development, production technology management and production safety system, etc. Now, he is responsible for Dairy Science Laboratory in Shanghai Jiao Tong University and leading a team service to clients, mainly developing new products and process technologies for dairy and beverage companies, meanwhile focusing on the research project of bioactive peptides in fermented milk and application development.
